Matfer Brioche Pans Editorial Review
The copper cannele mold is expensive but worth the investment as copper conducts heat better allowing for a crispy exterior crust on the cannele. One reviewer noted that it made a difference in the texture and flavor of the dessert. However, some customers were disappointed with the size of the mold, which was much smaller than expected. Others noted that they found no difference in using cheaper copper-tinted molds. The product description needs to be clearer on the number of molds available for the price. Customers need to ensure they handwash only and season the tins before first use. The Mauviel and Matfer molds are both good quality, but the design differs slightly. The Mauviel molds have rounder and curved fluting while the Matfer has sharper angles.
